Step-by-Step Method: How to Make Chicken Feet Stew
1. Season the Chicken Feet
Place the cleaned chicken feet in a pot. Add salt, Maggi, curry powder, thyme, rosemary, Cajun pepper, suya pepper, nutmeg, and fresh pepper. Mix everything together thoroughly so the seasoning coats every single piece.
2. Cook the Chicken Feet
Cover the pot and allow the chicken feet to cook in their own juices over medium heat. As they cook, they will release their own liquid and natural fat. It may look like the oil is burning at first, but don’t worry, this is just the natural fat and juices from the chicken. Continue cooking until the chicken feet are tender, adding a little water only if necessary. Once cooked, set them aside.
3. Prepare the Stew
In a separate pot, add your groundnut oil and allow it to heat over medium heat. Add your pepper mix and tomato paste. Give everything a good stir and allow it to cook for about 7 minutes, stirring occasionally.
4. Add the Chicken Feet
Add the cooked chicken feet to the bubbling pepper and tomato mixture. Stir gently to coat the chicken feet evenly with the rich sauce.
5. Add the Scent Leaves
Toss in your roughly chopped scent leaves and give everything another gentle mix. Allow the stew to simmer for a few minutes so the chicken feet can absorb the wonderful aroma and flavors of the sauce. Taste and adjust the seasoning if necessary.
6. Serve
Your spicy chicken feet stew is ready! Serve it hot alongside freshly cooked white rice and enjoy every bite.
Recipe Tips for Success
- Don’t rush the chicken feet: Cooking them until tender first makes the final texture of the stew much better.
- Build a strong base: The seasoning used when boiling the chicken feet forms the core flavor, so season them properly right from the start.
- Keep the tomato paste light: You don’t need a huge amount; it’s just there to add color and richness without overpowering the pepper.
