Ingredients You’ll Need

For the Eggs

  • 4–6 eggs
  • Onions and spring onions
  • Fresh pepper mix
  • Seasoning to taste
  • 2–3 Scotch bonnet peppers (depending on your preferred heat)

For the Sauce Base

  • Pepper mix
  • 1 medium onion, chopped
  • Vegetable oil (for frying)
  • Seasoning and salt, to taste

Step-by-Step Method: How to Make Egg Sauce for Rice

1. Boil and Cube the Eggs

In a bowl, break your eggs, go in with your spring onion, onions, peppermix, salt, and seasoning. Give that a very good mix and pour in your cooking dish (or nylon), once that is ready, bring that out, and cut into cubes.

2. Fry the Onions

Heat some vegetable oil in a pot over medium heat. Add your chopped onions and sauté until fragrant and slightly softened.

3. Add the Pepper Mixture

Pour in your blended pepper mixture and stir well. Allow it to cook until the mixture reduces and the raw tomato and pepper smell is completely gone.

4. Add the Boiled Eggs

Gently add your cubed boiled eggs to the simmering sauce. Stir carefully so the egg pieces don’t break apart. Allow the sauce to simmer for a few minutes so the eggs absorb all that delicious flavor.

5. Finish and Serve

Taste and adjust the seasoning if necessary. Once the sauce reaches your preferred consistency, take it off the heat and serve hot over steaming white rice!
